Anniversary Tasting Menu with Wine Pairing*
- Marinated red partridge crumble, homemade escabeche, cold soup of marcona almonds, and thyme breadcrumbs. Paired with an authentic Cava from Requena, Finca San Blas Extra Brut.
- Grilled boletus edulis, Iberian ham velouté and free-range egg yolk. Harmonized with a complex Champagne made from pinot meunier, pinot noir and chardonnay — Ultradition by Laherte.
- Roasted black grouper served in bouillabaisse. Accompanied by a dry aged white wine from Los Pedrones in Requena — Vermentino 2023 by Dussart Pedron.
- 100% acorn-fed Iberian pork shoulder from Extremadura and grilled baby carrots, carob mole, and cocoa nibs from El Collaret. Served with a Bordeaux red wine from the left bank dominated by cabernet sauvignon — Listrac Médoc 2016 Château Lafon.
- Choco-Blas, chocolate in different textures with olive oil and salt. Served with a Vin doux naturel from Maury 2015 by Briu, made from grenache noir.

During the visit to the Centro de Arte Hortensia Herrero, attendees will enjoy a set-menu tasting and wine pairing service (“Dinner with Pairing”).
